Berries are known as good sources of vitamin C and fiber; and diets high in both of these substances have been consistently
linked to lower cancer risk. But all berries, particularly strawberries and raspberries, are especially rich in a substance
called ellagic acid, which has shown the ability to prevent cancers of the skin, bladder, lung and esophagus in studies. This
chemical seems to utilize several different anti-cancer methods at once: it acts as an antioxidant, it helps the body deactivate
specific carcinogens, and it helps slow the reproduction of cancer cells.
Strawberries also contain a wide range of other flavonoids, each of which seems to employ a similarly wide array of anti-cancer
strategies. Blueberries contain a family of phenolic compounds which seem to be among the most potent antioxidants yet discovered.

2 lbs. red grapes, seeded or seedless, ¾ cup sugar, 1 tsp. salt, 2 ¼ cup cake flour, 1 1/3 cups sugar, 2
½ tsp. baking powder, ½ cup shortening 1 cup milk, 1 tsp. vanilla, 2 eggs
|
Preheat oven to 350 degrees. Grease a 9 x 12 inch baking pan. Wash grapes and pinch stems off. Cook in heavy
sauce pan until pulp is soft; run through a sieve or cheesecloth to remove seeds, if necessary. Place grape pulp into saucepan,
add skins and ¾ cup sugar; cook until skins are tender (about 15 minutes). You should have about 2 cups of pulp. Sift dry
ingredients into mixing bowl. Add shortening, ½ cup milk, eggs and vanilla; beat 2 minutes. Add remaining milk; beat 30 seconds.
Pour into prepared pan. Spread grape mixture over top of batter. NOTE: Grape layer will sink to the bottom during baking.
Bake 45 minutes. Serve warm with whipped cream, if desired. Makes 12 servings.

Red Raspberry Trifle
|
1 large Angel Food cake, 1 package frozen raspberries (thawed), 5 or 6 oz. Red Raspberry Claret, 2
pkg. Instant French Vanilla pudding, 1 12 oz. container non-dairy dessert topping.

Mix pudding with 2-2/3 cup cold milk until thick. Then fold in topping. Break angel food cake
into bit size pieces. Layer cake first, then add Claret to raspberries. Then a layer of pudding mixture, then
berries. Keep layering cake, pudding, berries. Refrigerate for several hours before serving. Very raspberry-y
...Claret cuts the sweetness.
Lo-Cal suggestions: Use skim milk and dry "dietetic" topping mix with skim milk (not water).
Besides being lo-cal, this variation is N-F-N-C, and is still delicious and elegant. Don't forget to garnish the top
with a little shaved chocolate or fresh berries
