There are many different types of citrus fruits. I will just name some of them below in order from smallest to largest.

All citrus fruit is acidic. The acid fruits are excellent foods. They, however, should be avoided when you have the flu because
the body could overreact to the detoxifying enzymes in the fruit and make you even more sick. Some people may have problems
with these fruits because of their acid content. The acid though is a healthy and organic nutritional element. For instance:
ascorbic acid is vitamin c, found especially in oranges.

Orange Dessert Squares

- 2/3 cup sugar, 1/2 cup butter, softened, 2 eggs, separated, 2 cups self-rising flour, 3/4 cup milk, 4 teaspoons finely
grated orange peel
- Orange Sauce: 2/3 cup sugar, 1 tablespoon cornstarch, 1/4 teaspoon salt, 1 cup boiling water, 1 teaspoon butter, 4 teaspoons
finely grated orange peel, 1/2 cup fresh orange juice

In a medium bowl beat sugar, butter, and egg yolks at medium speed until light and fluffy; add flour alternate
with milk at low speed, beginning and ending with flour. Beat egg whites until stiff but not dry; fold egg whites and orange
rind gently into the batter; pour into greased and floured 13x9x2-inch baking pan.
Bake at 375° for 20 to 25 minutes or until golden brown. Cool, cut into squares, and serve with warm orange sauce.
Makes about 12 to 18 servings.
Sauce: In small saucepan mix together sugar, cornstarch, and salt; pour the boiling water over mixture,
stirring constantly. Cook over medium heat until mixture boils and thickens. Add butter, orange peel, and orange juice.

Lemon Bars
|
1/2 cup powdered sugar, 1 1/2 cups flour, 1/2 tsp. salt, 3/4 cup butter, cut into small pieces
Topping: 4
eggs, 1 1/2 cups sugar rind of lemon, grated,1/2 cup lemon juice, fresh,3/4 cup whipping cream, powdered sugar, for dusting

Preheat oven to 325 degrees F. Spray a 9 X 13in baking pan. Mix sugar, flour, and salt into a bowl. With
a pastry blender, cut in the butter really well. Press the mixture into the base of the pan. Bake until golden brown, about
20 minutes. For the topping, whisk the eggs and sugar together until blended. Add the lemon rind and juice, mix well. Lightly
whip the cream and fold into the egg mixture. Pour over the lemon bars and return to the oven. Bake until set, about 40 minutes.
Cool completely before cutting into bars. Sift a small amount of powdered sugar over each bar.
